I recently started introducing Robbie to chores. I gotta teach that kid how to pull his weight around here! Just kidding, of course. I mean we do have chores for him, but that’s really because he’s in the stage where he wants to copy everything I do. And one of my chores? Repacking cans into boxes so we can take them to the recycling center. Robbie helped me with this chore one time, and now he wants to do it every single time we walk in the back door. Every time!
Last month, I was out of town and Laura was watching Robbie back home. That’s when I got a text with this photo of Robbie doing his chores. That kid…he’s hilarious! Oh, and did you notice the part of that text message where I told Laura I’m moving to northeast Ohio? Yup, northeast Ohio. One of my curling buddies is from that part of the country, but I’d never been there until recently. And now I want to go back!
Aside from the rolling hills and pastures, one of the best parts about northeast Ohio is the fact that Certified Angus Beef ® brand’s headquarters are located in Wooster, OH. I had the opportunity to visit the Certified Angus Beef ® brand Culinary Center as part of a Chef Summit a few weeks ago. A group of about 25 chefs, food writers and bloggers gathered in Wooster for a couple of days to get inspired and learn more about Certified Angus Beef ® brand. The goal was to share ideas, learn new techniques and chat about cooking tips…all while enjoying excellent food!
As I’ve noted before, Certified Angus Beef® brand utilizes 10 quality standards established by leading researchers and academics. These standards are what leads to the high quality beef that you can expect whenever you see that Certified Angus Beef® brand label. Black Angus cattle are one of the most popular breeds of cattle for beef production, and only the best of the best get that Certified Angus Beef® brand designation. In fact, only 1 in 4 Angus cattle meet the Certified Angus Beef® brand’s 10 quality standards.
In addition to learning more about Certified Angus Beef® brand, we had the opportunity at the Chef Summit to learn where every single cut of beef comes from. We had a hands-on experience breaking down a half steer into the various steaks, roasts and other cuts that you find in the grocery store. Fascinating! We broke into teams of 5 to practice our meat cutting skills, and then we turned to the kitchen for a Chopped style cooking challenge. We got to select any cut of beef that we liked, and we earned more points based on the difficulty of the cut. Our team selected beef belly, and we cooked up some Soy Braised Beef Belly Bao Buns with Pickled Cucumbers & Onions. And guess what? We won! I’ll have to recreate that dish here at home sometime soon!
Hatch Green Chile Burgers
On the second night of the Chef Summit, we headed out to dinner at a local restaurant in Wooster. One of the chefs that I sat next to ended up working for a restaurant group in Nashville, TN. My mother and sister both live in Nashville, so we immediately had something in common there. I love visiting Nashville, and he was telling me that the city is growing like crazy lately. As expected, the conversation turned towards food, and he told me that Hatch Green Chile Burgers are super trendy in Nashville right now. I love chiles, but I’ve never thought about using them in a burger. I was intrigued!
We haven’t been down in Nashville in a couple of years now, and I’ve been itching to go visit. Robbie was about 8 months old last time we visited, and let’s just say the plane ride wasn’t the best experience. Hopefully we can get back down there soon! In the meantime, I decided to celebrate National Grilling Month back here at home with my own version of those Hatch Green Chile Burgers. Hatch green chiles aren’t readily available in upstate New York (imagine that!), so I ordered a jar of hatch green chile sauce online. Hatch green chiles have so much flavor! Combine that with Certified Angus Beef® brand 80/20 ground beef, and you’ve got the makings for an amazing batch of burgers!
I also opted to create an easy cheese sauce for the top of these burgers. The secret ingredient? Cornstarch. Who knew that shredded cheese, cornstarch and a can of evaporated milk lead to an incredible cheese sauce for grilled burgers!? But as good as that cheese sauce was, Laura actually preferred to eat these leftovers plain. She noted that the burgers had such great flavor that they didn’t need the cheese sauce. And while I agreed with her about the flavor of the burgers, I still went for the cheese sauce because, well, cheese sauce!

Hatch Green Chile Burgers
Ingredients
For the Pepper Jack Cheese Sauce
- 2 cups pepper jack cheese shredded
- 1 Tbsp cornstarch
- 1 12-oz. can evaporated milk
- ½ tsp smoked paprika
- ¼ tsp salt
For the Burgers
- 2 pounds Certified Angus Beef ® brand ground beef I used 80/20
- ½ cup hatch green chile sauce
- ⅔ cup breadcrumbs
- 2 tsp chili powder
- 2 tsp ground cumin
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 medium red onion cut into ¼” slices
To Assemble
- 6 hamburger buns
- lettuce
- 1 large tomato cut into ½” slices
- ½ cup hatch green chile sauce
Instructions
For the Pepper Jack Cheese Sauce
- Using a large bowl, add cheese and cornstarch; toss until well combined.
- Transfer mixture into medium saucepan.
- Add evaporated milk, smoked paprika and salt; stir and place over medium-low heat.
- Cook, stirring frequently, for 3-4 minutes, or until sauce is smooth and has thickened noticeably.
- Reduce heat to low to keep warm until needed.
For the Burgers
- Preheat grill to medium-high heat.
- Using a large bowl, mix all of the burger ingredients (except for onions) until just combined. Shape into 6 patties and gently indent the center of each patty with your thumb.
- Brush grill grates with vegetable oil or spray with nonstick grilling spray. Place patties and onions on the grill; grill for 4-5 minutes per side, or until burgers reach an internal temperature of 160°F.
- {Optional} Place burger buns cut-side down on grill for 1-2 minutes.
- Begin assembling burgers by layering lettuce, tomato and patties on top of the buns. Add cheese sauce on top and then top with grilled onions and green chile sauce.

I did a double take at that pic of Robbie. He’s getting so tall! It sounds like you had so much fun in Ohio. Chopped is one of my favorite shows–when I visit my parents my mom likes to give me a Chopped basket and have me make dinner. (She has lots of ways of getting out of cooking, haha!) Sometimes The Fresh Market near us stocks Hatch chiles, so I’ll have to be on the lookout. Those burgers look dreamy!

Evaporated milk with your cheese sauce? I’m intrigued! But I can also imagine how Laura would want to eat those delicious burgers plain. I would never have thought about evaporated milk as the key to cheese sauce either, Neil…but it works! And it works beautifully! It’s such a delicious and easy (and creamy!) cheese sauce. Now I want to play around with that cheese sauce in my homemade macaroni + cheese recipe. But first, burgers! More burgers! And, yes, Robbie is a good little helper. He can put away dishes, but I’m not so sure about his washing skills. Haha!
