Bring the flavors of New Mexico to the grill with these Hatch Green Chile Burgers!  And don't forget the pepperjack cheese sauce!I recently started introducing Robbie to chores.  I gotta teach that kid how to pull his weight around here!  Just kidding, of course.  I mean we do have chores for him, but that’s really because he’s in the stage where he wants to copy everything I do.  And one of my chores?  Repacking cans into boxes so we can take them to the recycling center.  Robbie helped me with this chore one time, and now he wants to do it every single time we walk in the back door.  Every time!

Robbie text message

Last month, I was out of town and Laura was watching Robbie back home.  That’s when I got a text with this photo of Robbie doing his chores.  That kid…he’s hilarious!  Oh, and did you notice the part of that text message where I told Laura I’m moving to northeast Ohio?  Yup, northeast Ohio.  One of my curling buddies is from that part of the country, but I’d never been there until recently.  And now I want to go back!

Aside from the rolling hills and pastures, one of the best parts about northeast Ohio is the fact that Certified Angus Beef ® brand’s headquarters are located in Wooster, OH.  I had the opportunity to visit the Certified Angus Beef ® brand Culinary Center as part of a Chef Summit a few weeks ago.  A group of about 25 chefs, food writers and bloggers gathered in Wooster for a couple of days to get inspired and learn more about Certified Angus Beef ® brand.  The goal was to share ideas, learn new techniques and chat about cooking tips…all while enjoying excellent food!

Certified Angus Beef Culinary Center

Certified Angus Beef Chef Summit2As I’ve noted before, Certified Angus Beef® brand utilizes 10 quality standards established by leading researchers and academics.  These standards are what leads to the high quality beef that you can expect whenever you see that Certified Angus Beef® brand label.  Black Angus cattle are one of the most popular breeds of cattle for beef production, and only the best of the best get that Certified Angus Beef® brand designation.  In fact, only 1 in 4 Angus cattle meet the Certified Angus Beef® brand’s 10 quality standards.

In addition to learning more about Certified Angus Beef® brand, we had the opportunity at the Chef Summit to learn where every single cut of beef comes from.  We had a hands-on experience breaking down a half steer into the various steaks, roasts and other cuts that you find in the grocery store.  Fascinating!  We broke into teams of 5 to practice our meat cutting skills, and then we turned to the kitchen for a Chopped style cooking challenge.  We got to select any cut of beef that we liked, and we earned more points based on the difficulty of the cut.  Our team selected beef belly, and we cooked up some Soy Braised Beef Belly Bao Buns with Pickled Cucumbers & Onions.  And guess what?  We won!  I’ll have to recreate that dish here at home sometime soon!

Bring the flavors of New Mexico to the grill with these Hatch Green Chile Burgers!  And don't forget the pepperjack cheese sauce! On the second night of the Chef Summit, we headed out to dinner at a local restaurant in Wooster.  One of the chefs that I sat next to ended up working for a restaurant group in Nashville, TN.  My mother and sister both live in Nashville, so we immediately had something in common there.  I love visiting Nashville, and he was telling me that the city is growing like crazy lately.  As expected, the conversation turned towards food, and he told me that Hatch Green Chile Burgers are super trendy in Nashville right now.  I love chiles, but I’ve never thought about using them in a burger.  I was intrigued!

Bring the flavors of New Mexico to the grill with these Hatch Green Chile Burgers!  And don't forget the pepperjack cheese sauce! We haven’t been down in Nashville in a couple of years now, and I’ve been itching to go visit.  Robbie was about 8 months old last time we visited, and let’s just say the plane ride wasn’t the best experience.  Hopefully we can get back down there soon!  In the meantime, I decided to celebrate National Grilling Month back here at home with my own version of those Hatch Green Chile Burgers.  Hatch green chiles aren’t readily available in upstate New York (imagine that!), so I ordered a jar of hatch green chile sauce online.  Hatch green chiles have so much flavor!  Combine that with Certified Angus Beef® brand 80/20 ground beef, and you’ve got the makings for an amazing batch of burgers!

Bring the flavors of New Mexico to the grill with these Hatch Green Chile Burgers!  And don't forget the pepperjack cheese sauce!I also opted to create an easy cheese sauce for the top of these burgers.  The secret ingredient?  Cornstarch.  Who knew that shredded cheese, cornstarch and a can of evaporated milk lead to an incredible cheese sauce for grilled burgers!?  But as good as that cheese sauce was, Laura actually preferred to eat these leftovers plain.  She noted that the burgers had such great flavor that they didn’t need the cheese sauce.  And while I agreed with her about the flavor of the burgers, I still went for the cheese sauce because, well, cheese sauce!

Bring the flavors of New Mexico to the grill with these Hatch Green Chile Burgers!  And don't forget the pepperjack cheese sauce!Grab some Certified Angus Beef® brand ground beef, a jar of hatch green chile sauce and your favorite burger toppings.  These Hatch Green Chile Burgers are delicious, and I can totally see why they are taking Nashville by storm right now!  If you make a batch of these burgers at home, snap a photo and tag me on Instagram (@Spicedblog).  Or swing back by and leave a comment.  Either way, I’d love to hear how you’re celebrating National Grilling Month!

  1. First of all, Robbie is growing up so fast! It’s like last time you shared a pic he was a baby and now he is like a little boy! What?! How sweet of him to help you too!
Ok, this burger. David. That cheesy sauce. C’mon!! Like that hot sauce commercial, I could put that on everythang!! And, guess what? Supposed to be super nice this weekend (and no wind!) so you know we’ll be grilling. Have to get these burgers on the menu asap! Have a good one, my friend 🙂

    1. Oh man, you’re telling me, Dawn! Robbie is growing like a weed…and I can tell every time I lean down to pick him up! In fact, Laura and I were just saying last week that it feels like overnight that Robbie went from a baby to a little boy. Crazy! And as far as these burgers, make ’em! Seriously. Hatch chiles in burgers is my new obsession…no wonder these things are so trendy down in Nashville right now! 🙂 Hope you had a great weekend, my friend!

  2. I did a double take at that pic of Robbie. He’s getting so tall! It sounds like you had so much fun in Ohio. Chopped is one of my favorite shows–when I visit my parents my mom likes to give me a Chopped basket and have me make dinner. (She has lots of ways of getting out of cooking, haha!) I’m going to send her this recipe because it sounds a lot like her favorite burger at a local restaurant. The burger is called the Little Hellion, which I’ve always thought is super cute :). Have a great weekend!

    1. You’re telling me, Kelsie! I can’t believe how tall Robbie is getting. He can now reach up and pull stuff off the countertop…ugh. Hah! Thanks so much for passing this recipe along to your Mom! We really are obsessed with adding Hatch chiles to our burgers now…so good. And you live down there in Hatch chile country. Well, close. Closer than us at least! Hope you had a great weekend, my friend!

  4. I’m with Kelsie – I can not believe how tall Robbie is! Glad you guys had so much fun in Ohio…

Anything with Hatch chiles gets my attention, especially when there is a juicy burger involved. This burger is a beauty, David!

    1. Robbie really is growing like a weed lately. I know I keep saying that, but it’s crazy! (And, trust me, I know how fast he’s growing every time I lean over and pick him up…haha!) So Hatch chiles + burgers? They’re a thing of beauty. We seriously are addicted to these now! Thanks, Marissa!

  5. Hi Davie! These burgers sound amazing! I can get canned Hatch chiles at Walmart. They have a can of whole small chiles which are great for making stuffed peppers. I have to side with Laura, I’d forego the cheese sauce too. Have a great weekend!

    1. They have canned Hatch chiles at Walmart? Say what!? We can’t get the real things up here, but I didn’t even think to look for them at Walmart. I’m putting ’em on the list for next week now! Hatch chiles + burgers are an amazing combination…we’re SO hooked at these right now. Thanks so much, my friend, and I hope you had a great weekend!

    1. You know, that’s a good point, Katie! I didn’t think about checking our local Fresh Market to see if they have Hatch chiles. I’ll have to do that. But the jar of sauce totally worked well, too, and now we are hooked on hatch chiles + burgers!

  6. How great to have the opportunity go visit Angus Beef headquarters. I’m definitely in the mood for this burger, especially with Hatch Chile season coming up in a couple of weeks! 🙂

    1. I’ve got to say that Hatch chiles + burgers is one heck of an awesome combination. We’re hooked on these burgers, and we’ve already made another batch this past weekend. They’re packed with so much flavor! Thanks so much, Valentina!

  7. What an amazing trip! Sounds like it was filled with inspiration and great food! I love Hatch chilies and will have to try them on burgers! I have to mix up our regular summertime burgers and these would be perfect! Take full advantage of Robby wanting to do chores! Believe it or not, there comes a time when they don’t think they are fun at all anymore! 😉

    1. Getting the chance to visit Certified Angus Beef brand HQ was a dream, Kathy! And getting the chance to chat with so many chefs really did inspire me…starting with these Hatch Green Chile Burgers. I agree that mixing up summer burgers is fun, and I’ve gotta say that hatch chiles + burgers is an amazing combo! And, wait, what? There comes a time when Robbie won’t like doing chores?? No way. Lies I say! Haha.

  8. David – I love Hatch chiles so much, thanks for this recipe, I’m going to have to make these! I particularly love this cheese sauce idea! You are right, who knew? I can’t wait to make these luscious burgers! Thanks!

    1. Definitely make these burgers soon, Laura! We are so hooked on the hatch chiles + burger combo here right now. And the cheese sauce…yum!!

  9. Evaporated milk with your cheese sauce? I’m intrigued! But I can also imagine how Laura would want to eat those delicious burgers plain. I think I’d be like you though and have a good dollop of cheese sauce over mine. I really need to try my cheese sauce with evaporated milk! Love how Robbie is helping you with your chores David! How is he with doing the dishes? He’s welcome here if so! 😉

    1. I would never have thought about evaporated milk as the key to cheese sauce either, Neil…but it works! And it works beautifully! It’s such a delicious and easy (and creamy!) cheese sauce. Now I want to play around with that cheese sauce in my homemade macaroni + cheese recipe. But first, burgers! More burgers! And, yes, Robbie is a good little helper. He can put away dishes, but I’m not so sure about his washing skills. Haha!

  10. I am TOTALLY making these. That cheese sauce is calling my name. Pepper Jack is one of my favorite cheese especially on top of Certified Angus Beef burgers.

    1. Christie….Christie… (<--That's the cheese sauce calling your name, Christie!) Haha. It really is a delicious burger, and I'm thinking I need to put these on our menu again this coming weekend. Thanks so much, my friend!

  11. David, I love Hatch green chili’s and can’t get then over here either. I have to have one of your Hatch Green Chile Burgers. That cheese sauce looks great and that Zia roasted hatch looks like it would do the trick. I’ve a care package coming my way soon, I’ll have to get my son to through in a jar of Zita. Thanks for sharing…

    1. These burgers, Ron…oh man, were they good! I love burgers, and I’ve gotta say that the Hatch green chili version is definitely one of the best I’ve ever had. Make sure your son drops a jar of that Zia sauce into your care package! Thanks so much, my friend.
