Celebrate warm summer days with this twist on a classic. These Frozen S’mores Bars are sure to be a hit in your family!
We’re incredibly lucky to have a great daycare facility near our house. When Laura was pregnant, we checked out several local daycares/schools, and we picked one that happened to be closest to our house. I had a little bit of guilt about this at the time. Since I worked from home, I figured I should be able to watch Robbie at the same time. I mean, he could just sit next to my desk and play, right? Oh, how little I understood about kids back then!
Fast forward 2.5 years. That guilt about putting Robbie in daycare is completely gone. He loves his teachers, and he comes home everyday talking about what he learned. In fact, one of his former teachers is now our regular babysitter. And Robbie loves (I mean loves!) when she comes to play with him. His teachers send regular updates via an app (gotta love technology!), so we get to see photos of what he’s up to during the day. Back during the holidays, he baked us a pie. Seriously. I have pictures to prove it.
Since Robbie was ~2 years old at the time, baking a pie was out of the question. Instead, they created a no-bake pudding pie that just required a bit of mixing. Genius activity for a toddler! Robbie had a blast making his chocolate pudding pie. And knowing Robbie, he (maybe) took one bite of that pie before saying “all done.” (He apparently didn’t inherit his Dad’s sweet tooth!)
So I have to say that the inspiration for these Frozen S’mores Bars comes from Robbie. Pudding. I can’t remember the last time I made pudding. But pudding is delicious! So I decided to create Frozen S’mores Bars which featured a layer of chocolate fudge pudding on top of a graham cracker crust. Then I just mixed some marshmallow fluff with whipped topping to incorporate the marshmallow flavor and *boom* Frozen S’mores Bars. (On a side note, if you manage to scoop out a cup of marshmallow fluff without getting the stuff everywhere, then please share your secret!)
Since the days are warming up, I say it’s time to break into summer desserts! Now I’m not opposed to turning on the oven in the summer, but I do love a good frozen dessert. And these Frozen S’mores Bars are legit good! I would recommend serving these with a fork, though, as the marshmallow layer (even frozen) is still a bit sticky. Or you can just go all in and get marshmallow everywhere…that’s what the pool is for, right? Here’s to warmer days, long evenings on the backporch and delicious summer desserts!
