Eggnog Spice Cupcakes

One of my favorite things about the holidays is nutmeg.  Yes, seriously…nutmeg.  Ok, there are other things I love too…for instance cinnamon.  Especially if the aforesaid cinnamon is paired with nutmeg.  So you can imagine my excitement when the eggnog starts to show up on store shelves this time of the year!  As if drinking the nog isn’t enough, I decided I needed to incorporate it into a cupcake this year.

Recipe for Eggnog Spice Cupcakes, PERFECT for Christmas!

My neighbors and coworkers ate devoured the extra Holiday Spice cupcakes that I had, so you would be smart to go ahead and make extras!

Making Eggnog Spice Cupcakes

If you wanted to make these adult-themed, you could incorporate some rum into your cream cheese frosting.  Just be aware that you will need to add more powdered sugar to offset the additional liquid.

Eggnog Spice Cupcakes

Yield: 24 cupcakes

Ingredients

    For the Cupcakes:
  • 2 1/4 cups cake flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp nutmeg
  • 1 tsp cinnamon
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 cup eggnog
  • 1/3 cup milk
  • For the Frosting:
  • 8 oz (1 package) cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3 tbsp eggnog
  • 1 tsp nutmeg
  • 4-5 cups powdered sugar

Instructions

    For the Cupcakes:
  1. Preheat oven to 350 degrees.
  2. Combine the cake flour, baking powder, baking soda, salt, nutmeg, and cinnamon in a bowl and mix well. Set this bowl of dry ingredients aside.
  3. Using an electric mixer with the paddle attached, beat butter on high until light and fluffy.
  4. Add sugar to butter and mix until well incorporated.
  5. Combine eggs and vanilla extract and then add this mixture in two parts to the butter/sugar. Mix until each addition is fully absorbed.
  6. Combine the eggnog and milk in a 2-cup measuring cup.
  7. Beginning with the flour mixture, alternately add small amounts of dry and liquid ingredients on low speed until fully mixed.
  8. Line 2 cupcake pans with paper liners and fill each liner about 2/3 full of batter.
  9. Bake at 350 for 18-22 minutes or until done.
  10. Allow cupcakes to fully cool before frosting.
  11. For the Frosting:
  12. In an electric mixer fitted with the paddle attachment, combine the cream cheese, butter, eggnog, and nutmeg. Beat until light and creamy.
  13. Slowly add powdered sugar until you reach desired consistency. (Add the powdered sugar 1/2 cup at a time and ensure it is fully incorporated before adding more.)

Tis the season for gifting treats. If you’re wondering what to make for friends and neighbors and want to be sure it’s a tried and true recipe, this selection from Food Network will do the trick! We were thrilled to hear from Food Network asking us to share their food gifts! “Of course”, we said. We love their recipes and these are no exception. So pick your fave + gift them up!

1. Caramel Apple Popcorn Clusters – While making traditional popcorn garlands, use leftover popcorn for this treat. 

Caramel Apple Popcorn Clusters

Ingredients

  • 2 tablespoons vegetable oil
  • 2/3 cup popcorn kernels
  • 4 cups dried apple chips, broken into pieces
  • 1 cup unsalted almonds, roughly chopped
  • 2 cups apple juice
  • 2 cups packed light brown sugar
  • 1/4 cup light corn syrup
  • 12 tablespoons (1 1/2 sticks) unsalted butter, cut into pieces
  • Kosher salt
  • 1/4 teaspoon apple pie spice
  • 1 tablespoon applejack or other apple brandy (optional)
  • 1/4 to 1/2 teaspoon cayenne pepper (optional)

Instructions

  1. Line 2 baking sheets with parchment paper. Heat the vegetable oil in a pot over medium-high heat. Add the popcorn kernels; cover and cook, shaking the pan, until the popping subsides. Remove from the heat and let any remaining kernels pop for 30 more seconds. Divide the popcorn between the prepared baking sheets, discarding any unpopped kernels. Scatter the apple chips and almonds on top.
  2. Make the caramel: Bring the apple juice, brown sugar and corn syrup to a boil in a large heavy-bottomed saucepan over medium-high heat. Cook without stirring until the mixture is deep amber and a candy thermometer registers 280 degrees F, about 30 minutes (the caramel will bubble vigorously toward the end of the cooking time).
  3. Stir the butter into the caramel until melted. Add 2 teaspoons salt and the apple pie spice. Add the applejack and cayenne, if using, and cook until slightly thickened, about 1 minute. Remove from the heat. Pour the hot caramel over the popcorn mixture and carefully toss with two rubber spatulas. Let cool slightly, then separate the mixture into clusters while still warm. Let cool completely.

2. Chocolate Peanut Butter Fudge – A classic holiday treat! Easy to make too! 

Chocolate Peanut Butter Fudge

Ingredients

  • Unsalted butter, softened, for brushing
  • 1 14-ounce can sweetened condensed milk
  • 2 cups bittersweet chocolate chips
  • 2 pinches salt
  • 2 cups peanut butter chips

Instructions

  1. Line an 8-inch-square baking pan with foil, pressing it into the corners and up the sides; leave an overhang on 2 sides. Brush the foil with butter.
  2. Combine 3/4 cup condensed milk, the chocolate chips and a pinch of salt in a medium saucepan. Combine the remaining condensed milk, the peanut butter chips and a pinch of salt in a separate saucepan. Put both pans over low heat and cook, stirring occasionally, until the chips are melted and smooth.
  3. Spoon the chocolate mixture into the prepared pan, leaving spaces between the spoonfuls. Spoon the peanut butter mixture into the gaps. Brush an 8-inch square of parchment paper with butter and lay it directly on top of the fudge; press to flatten evenly and fill any gaps. Refrigerate until firm, about 45 minutes. Lift the foil to remove the fudge from the pan and cut into 1-inch squares. Store up to 1 week in an airtight container.

Super Chunky Christmas Cookies

Ingredients

  • 1 cup toasted shredded coconut
  • 1 cup semisweet chocolate chunks
  • 1/2 cup chopped cashews
  • 1 cup white chocolate chips
  • 3/4 cup red and green M&M's
  • 1/2 cup Dutch-process cocoa powder
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1 1/2-liter glass jar

Instructions

  1. Beat 1 1/4 cups sugar and 1 stick butter with a mixer until fluffy.
  2. Beat in 1 egg and 1 teaspoon vanilla extract.
  3. Add the Super-Chunky Christmas Cookie mix and mix until well combined. Scoop big round cookies (about 2 heaping tablespoons each) onto a baking sheet.
  4. Bake at 350 degrees until set, about 10 to 12 minutes. Cool on a rack.

4. Ricotta Orange Pound Cake – This treat makes a delicious Christmas morning breakfast! 

Ricotta Orange Pound Cake

Ingredients

  • 3/4 cup (1 1/2 sticks) unsalted butter, at room temperature, plus more to grease the baking pan
  • 1 1/2 cups cake flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1 1/2 cups whole-milk ricotta cheese
  • 1 1/2 cups plus 1 table spoon granulated sugar
  • 3 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 orange, zested
  • 2 tablespoons amaretto Confectioners' sugar, for dusting

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 9-by-5-by-3-inch loaf pan with butter. In a medium bowl, combine the flour, baking powder and salt. Stir to blend.
  2. Using a mixer, cream the butter, ricotta and granulated sugar until light and fluffy, about 3 minutes. With the machine running, add the eggs 1 at a time. Add the vanilla, orange zest and amaretto until combined. Add the dry ingredients, a small amount at a time, until just incorporated.
  3. Pour the batter into the prepared pan and bake until a toothpick comes out clean and the cake pulls away from the sides of the pan, 45 to 50 minutes. Let cool in the pan for 10 minutes, then transfer to a rack to cool completely. To wrap, return to the pan and dust with confectioners' sugar.

Cinnamon Biscuits & Pumpkin “Gravy” & GIVEAWAY!

Of course, in my house, this typically means shared time around the dinner table…or lunch table…or breakfast table…or snack table…ok, you get my drift!

Speaking of breakfast tables, I recently had an urge for homemade biscuits and gravy, but I also had a serious craving for something sweet. (If you know me, you’ll know that I always have a craving for cinnamon, nutmeg, and pumpkin…)  I had just seen Country Crock’s Pumpkin Spice-flavored spread in the store, so an idea begin to form!  I decided to combine my cravings which led to this awesome creation–behold the Cinnamon Biscuits with Pumpkin “Gravy”!

Cinnamon Biscuits & Pumpkin “Gravy”

Ingredients

    For the Cinnamon Biscuits:
  • 2/3 cup sour cream
  • 1/2 cup sparkling water (or club soda)
  • 1 stick margarine, chilled
  • 2 3/4 cups all-purpose flour
  • 2 tbsp baking powder
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 tbsp cinnamon
  • 1 tsp nutmeg
  • For the Pumpkin Gravy:
  • 1/2 cup Pumpkin Spice Spread
  • 1/2 stick margarine
  • 1/4 cup flour
  • 2 tbsp sugar
  • 2 tsp cinnamon

Instructions

    For the Cinnamon Biscuits:
  1. Mix the flour, baking powder, sugar, salt, cinnamon, and nutmeg in a large bowl.
  2. Using 2 forks or a pastry blender, cut the margarine into the flour mixture until the mixture forms small pea-sized bits of dough.
  3. Add the sour cream and sparkling water and mix until a biscuit dough forms. (You may need to add small amounts of flour or water to adjust the dough consistency.)
  4. Generously flour your work surface and roll out the biscuit dough until about 1/2-3/4 inches thick. Using a biscuit cutter or a small round cookie cutter, cut out rounds of dough and place them onto a parchment-lined sheet pan.
  5. If you prefer, you can brush some melted margarine onto the biscuits before placing them in the oven.
  6. Bake at 350 degrees for 16-18 minutes, or until done.
  7. For the Pumpkin Gravy:
  8. In a large pan on low heat, slowly melt 1/2 cup of Pumpkin Spice Spread with 1/2 stick of margarine. (Tip: A cast iron pan works wonders for this type of recipe!)
  9. Once fully melted, slowly add 1/4 cup of all-purpose flour in several additions, mixing well after each addition.
  10. Combine the sugar and cinnamon and add to the flour mixture.
  11. Finally, in order to thin your "gravy," add water until you reach the desired consistency. (I personally added approximately 1/2 cup of water in several additions.)
