Ingredients
18-oz. block feta cheese
3Tbspall-purpose flour
1large egg
1Tbspmilk
¾cupPanko bread crumbs
4Tbspgrated Parmesan cheesedivided
1tspdried oregano
½tspdried basil
canola oilfor frying
{for garnish} chopped Italian parsley
Instructions
Cut feta into (9) 1” cubes. Cut each cube in half horizontally. Set feta aside.
Using a shallow bowl, whisk together the egg and milk.
Using a separate shallow bowl, add Panko bread crumbs, 2 tablespoons of Parmesan cheese, oregano and basil; stir until well combined.
Using a third shallow bowl, add flour.
Dip feta into the flour, then into the egg mixture and then into the breadcrumb mixture. (Tip: Make sure all sides of cube get coated with each mixture.)
Using a deep cast iron skillet or Dutch oven, add 1” of vegetable oil. Heat over medium-high heat until oil reaches 375°F.
Fry feta cubes for 1-2 minutes per side, or until golden brown. Transfer feta to a paper-towel lined plate. Repeat as needed until all cubes are fried.
Garnish with freshly chopped parsley and the remaining 2 Tbsp of Parmesan cheese before serving.
