1tbspunsalted butter
1medium onionsliced
1medium red cabbageshredded (about 6-8 cups of shredded cabbage)
1Granny Smith applepeeled and thinly sliced
1tbspbrown sugar
½cupchicken or vegetable stock
¼cupsherry vinegar
1tbspbalsamic vinegar

Instructions
Melt the butter in a large saute pan or Dutch oven on the stovetop. Add onion and sauté for about 6-8 minutes, or until onion is translucent. (Stir occasionally to ensure the onion does not burn).
Add the cabbage and cook for another 5 minutes.
Add the apple, brown sugar, stock, and sherry vinegar and bring to a light simmer.
Cover and place in the oven for 25-30 minutes. (Stir after about 15 minutes to ensure cabbage cooks evenly.)
