3large eggs
¾cupevaporated milk

1tspcinnamon
½tspnutmeg
¼tspsalt
pie crusthomemade or store-bought

Instructions
Place sweet potatoes in a pot of boiling water; cook until tender (~20-25 minutes). Let cool, and then scrape the potato out of the skins. Mash potatoes in a large bowl until smooth; set aside. (Note: Make sure the mashed sweet potatoes are smooth and not lumpy. I use a mixer to ensure they are smooth.)
Cream together the butter and sugar until light and fluffy.
Add the eggs and mix until well combined.
Add the mashed sweet potatoes, evaporated milk, vanilla, cinnamon, nutmeg and salt. Mix until well combined.
Transfer mixture into unbaked pie shell.
Bake at 350°F for 50-55 minutes, or until a toothpick inserted in the center of the pie comes out clean. (Tip: Check crust after about ~40 minutes. If it is browning too quickly, cover crust with a thin strip of aluminum foil.)
