For the Fruit
5Granny Smith applespeeled and sliced
2cupsblueberriesfresh or frozen
2Tbsplemon juice
1cuplight brown sugar
1tspcinnamon
2tspcornstarch
For the Topping
6Tbspunsalted butterroom temperature
¼cupgranulated sugar
1Tbspmilk
1large egg
½Tbspvanilla extract
1cupall purpose flour
1tspbaking powder
¼tspsalt
vanilla ice creamfor serving
Instructions
For the Fruit
Lightly grease a 5-quart slow cooker.
Add sliced apples, blueberries, lemon juice, light brown sugar and cinnamon; stir until well combined. In a small bowl, whisk together cornstarch with ¼ cup water. Stir cornstarch mixture into fruit mixture in slow cooker. Cover and cook on low for 2 hours.
For the Topping
Using an electric mixer, beat butter and sugar together until light and fluffy (~2-3 minutes on medium speed).
Add milk, egg and vanilla extract; beat until just combined.
Add flour, baking powder and salt; beat until just combined.
Drop spoonfuls of Topping evenly on top of fruit mixture in slow cooker. Cover and continue cooking on low for 2½ hours.
