Ingredients
For the Strawberry Layers
1cupstrawberriesfresh or frozen, hulled and halved
¾cupvanilla Greek yogurt
½Tbsphoney
For the Blueberry Layers
1cupblueberriesfresh or frozen
¾cupvanilla Greek yogurt
½Tbsphoney
For the Plain Layers
¾cupvanilla Greek yogurt
Instructions
For the Strawberry Layers
Place strawberries in a food processor or a mini chopper. Pulse several times until pureed.
Using a spatula, scrape the chopped strawberries in a large bowl. Add yogurt and honey; stir until well blended.
For the Blueberry Layers
Place blueberries in a food processor or a mini chopper. Pulse several times until pureed.
Using a spatula, scrape the chopped blueberries in a large bowl. Add yogurt and honey; stir until well blended.
To Assemble
Divide the Strawberry yogurt evenly into 8 popsicle molds. Place molds in freezer and let freeze for 2 hours.
Remove molds from freezer and divide the vanilla Greek yogurt (for Plain Layers) evenly into the molds. Place molds back in freezer and let freeze for 2 more hours.
Remove molds from freezer and divide Blueberry mixture evenly into molds. Place back in freezer for 2 more hours, or until completely frozen.
Notes
To speed up this process, you could certainly use store-bought strawberry and vanilla Greek yogurt. I just thought it would be fun to use fresh berries in these popsicles.
