Ingredients
1¼cupscake floursee note
¾cupgranulated sugar
1¼teaspoonsbaking powder
¼teaspoonsalt
1tablespoonalmond extract
1egglightly beaten
½cupbuttermilk
2½tablespoonsunsalted buttermelted
For The Glaze & Topping:
1cupconfectioner's sugar
2tablespoonsJell-O pistachio instant pudding
3tablespoonsmilk
½cupalmondschopped (and toasted if preferred)
Instructions
Sift together cake flour, granulated sugar, baking powder, and salt.
Stir in almond, egg, buttermilk, and melted butter until just mixed (do not overmix).
Spoon or pipe the doughnut batter into a greased doughnut pan.
Bake at 425 degrees for 4-5 minutes (watch carefully to not overbake).
Let sit to cool before popping out.
In a small mixing bowl, combine confectioner's sugar, pistachio pudding powder, and milk. Stir until a glaze forms.
Dip donuts in glaze and sprinkle almonds on top.
Notes
If you don't have cake flour, you can make it using all-purpose flour. Just measure out 1¼ cups of all purpose flour. Remove 2½ tablespoons of flour and put it back in the bag. Now add 2½ tablespoons of cornstarch. Stir until well combined.
