Ingredients
1Tbspunsalted butter
½cupwhite oniondiced
1red bell pepperdiced
6small tomatilloshusked and diced
4cupscornfresh or frozen
⅓cupMexican crema or sour cream
½Tbsplime juice
⅓cupfresh cilantrominced
¾tspsalt
½tspred pepper flakes
cotija cheesefor garnishing
Instructions
Using a large skillet, add butter and place over medium-high heat. Once butter has melted, add onions and red bell pepper; cook for 4-5 minutes, or until onions have softened.
Add tomatillos to pan; continue cooking over medium heat for 4-5 minutes, or until tomatillos have softened.
Add corn; cook for 5-6 more minutes, stirring occasionally.
Remove from heat and add crema/sour cream, lime juice, cilantro, salt and red pepper flakes; stir until well combined.
