For the Cupcakes
3cupsall-purpose flour
1Tbspbaking powder
¼tspsalt
1tspcinnamon
1cupunsalted buttersoftened
¾cupgranulated sugar
¾cupbrown sugar
3eggs
½Tbspvanilla extract
1cupmilk
6piecescooked bacon
For the Maple Frosting
¼cupunsalted butterroom temperature
4ouncescream cheeseroom temperature
2½cupspowdered sugar
¼cupmaple syrup
1tspvanilla extract
Instructions
For the Cupcakes
In a medium bowl, sift together the flour, baking powder, salt, and cinnamon. Stir until well combined. Set aside.
In the bowl of a countertop mixer fitted with the paddle attachment, cream together the butter and both sugars until well combined, approximately 3-5 minutes. Add eggs and vanilla extract, and mix until fully absorbed.
Add approximately ½ of the flour mixture to the bowl and mix until fully combined. Add ½ cup of milk and mix until fully combined. Repeat this step with the remaining flour and milk.
Pour batter into lined-muffin tins and bake at 350°F for 20-22 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Allow cupcakes to cool before frosting.
For the Maple Frosting
In the bowl of a countertop mixer fitted with the paddle attachment, cream together the cream cheese and butter.
Add powdered sugar 1/2 cup at a time. Mix after each addition until well combined.
Add maple syrup and vanilla; mix until fully incorporated.
Frost each cupcake and garnish with 1/3 slice of bacon.
