Ingredients
For the Blueberry Layers
1½cupsblueberriesfresh or frozen
1cupvanilla Greek yogurt
2Tbsphoney
For the Lemon Layer
1cupvanilla Greek yogurt
¼cupfresh lemon juice~2 lemons
2tsplemon zest~1 lemon
3Tbsphoney
Instructions
For the Blueberry Layers
Place blueberries in a food processor or a mini chopper. Pulse several times until well-chopped.
Using a spatula, scrape the chopped blueberries in a large bowl. Add yogurt and honey; stir until well blended.
For the Lemon Layer
Place all ingredients in a medium bowl; stir until well blended.
To Assemble
Divide half of the Blueberry mixture evenly into 8 popsicle molds. Divide all of the Lemon mixture evenly into the molds on top of the first Blueberry portion. Finish by dividing the remaining Blueberry mixture on top of the Lemon portion.
Place molds in freezer for 3-4 hours, or until completely frozen. (Tip: To remove popsicles from molds, run hot water over outside of mold for ~30-60 seconds.)
