For the Coconut Pound Cake
1½cupsunsalted butterroom temperature
3cupsgranulated sugar
6large eggs
½tspsalt
3¼cupsall-purpose flour
1cupheavy whipping cream
1½cupssweet coconut flakes
2tspvanilla extract
For the Glaze
⅔cupsweet coconut flakes
2Tbspunsalted buttermelted
1½cupsconfectioner’s sugar
2Tbspmilk
1tspvanilla extract
Instructions
For the Coconut Pound Cake
Preheat oven to 300°F.
Using an electric mixer fitted with the paddle attachment, cream butter and sugar together until light and fluffy (3-4 minutes on medium speed).
Add eggs two at a time, mixing well after each addition.
Add salt and half of the flour to the bowl; mix until well combined.
Add heavy whipping cream; mix until well combined.
Add remaining flour, coconut flakes and vanilla extract; mix until well combined.
Scrape sides and bottom of bowl to ensure batter is well combined.
Grease and flour a 10-12 cup Bundt pan (or generously spray with baking spray and then lightly dust with flour). Pour batter into prepared pan.
Bake for 60 minutes. Tent top of cake with aluminum foil and continue baking for 55-60 more minutes, or until a toothpick inserted into the center of the cake comes out clean.
Let cool in pan for 15 minutes before inverting onto a wire rack; let cool completely.
For the Glaze
Using a dry medium skillet, add coconut flakes and place over medium heat. Let cook, stirring often, for 3-5 minutes, or until flakes are light golden brown. Remove skillet from heat and set aside.
Using a small mixing bowl, whisk together the melted butter, powdered sugar, milk and vanilla extract.
Drizzle glaze over top of the cake and sprinkle toasted coconut flakes on top before the glaze sets.
