For the Coconut Portion
8oz.full-fat coconut milksee note
2Tbsphoney
2tspvanilla extract
¼cupshredded coconut
zest of 1 lime~2 tsp
For the Lime Portion
⅓cuplimeade concentrate
3oz.full-fat coconut milk
¾cupwater
1Tbsphoney
Instructions
For the Coconut Portion
Using a medium bowl, add all ingredients and stir until well combined.
For the Lime Portion
In a separate bowl, add all ingredients and stir until well combined.
For the Popsicles
Divide the Lime mixture into two equal parts. Place one part in the refrigerator for later. Divide the remaining part evenly into 8 popsicle molds. Place molds in freezer and let freeze for 2 hours.
Remove molds from freezer and divide the Coconut mixture evenly into the molds. Place molds back in freezer and let freeze for 2 more hours.
Remove molds from freezer and divide remaining Lime mixture evenly into molds. Place back in freezer for 2 more hours, or until completely frozen.
Notes
Full-fat coconut milk is often found in cans in the Asian section of the grocery store. It tends to separate in the can, so make sure to stir it together again before using.
