Ingredients
3cupsall-purpose flour
1¼tspbaking soda
1tspbaking powder
½tspsalt
2tspground cinnamon
½tspground ginger
3large eggs
1cupvegetable or canola oil
1½cupsgranulated sugar
¼cupbrown sugar
2tspvanilla extract
2cupszucchinishredded (~2 medium zucchini)
1cuppecanschopped
1¼cupschocolate chips
{optional} ¼ cup sanding sugaror other coarse sugar
Instructions
Preheat oven to 325°F.
Grease and flour 2 standard bread pans; set pans aside.
Using a large bowl, add flour, baking soda, baking powder, salt, cinnamon and ginger; stir until well combined.
In a separate bowl, whisk together eggs, oil, sugar, brown sugar and vanilla. Pour liquid mixture into dry mixture and stir until well combined.
Add shredded zucchini, pecans and chocolate chips; stir until well combined.
Divide batter evenly into 2 prepared pans.
{Optional} Sprinkle tops of batter with sanding sugar.
Bake for 60-65 minutes, or until a toothpick inserted into center of loaves comes out mostly clean. Let loaves cool in pan for 30 minutes and then transfer to cooling rack until completely cooled.
