For the Chicken

skinless chicken breasts, cut into 1” pieces
salted peanuts
chopped
fresh cilantro
chopped
For the Peanut Sauce

rice vinegar

soy sauce

lime juice

honey

tsp
garlic
minced

peanut butter

crushed red pepper flakes
Instructions
For the Chicken
Using a small bowl, whisk together all ingredients except for chicken breasts, peanuts and cilantro.
Place chicken breasts in a large glass baking dish (or ziptop plastic bag). Add marinade, turning several times to coat.
Cover and refrigerate chicken for at least 4 hours (or up to 24 hours).
Preheat grill to medium-high (~375°F).
Remove chicken from marinade and thread onto skewers. (Note: If using wooden skewers, soak skewers in water for at least 30 minutes first.)
Place skewers on grill and cook for 6-8 minutes, turning occasionally, or until chicken is fully cooked.
Remove skewers from grill and sprinkle with chopped peanuts and cilantro.
Serve with peanut sauce for dipping.
For the Peanut Sauce
Using a small mixing bowl, add rice vinegar, soy sauce, lime juice, honey and garlic; whisk until well combined.
Add the peanut butter, salt and red pepper flakes; whisk until smooth.
