Ingredients
2cupsraw unsalted almonds
2Tbspmaple syrup
2Tbspwater
½tspsea salt
1/8tspcayenne
1/8tspcinnamon
1Tbspgranulated sugar
Instructions
Spread raw almonds onto a parchment-lined sheet pan and bake at 350 for 12-15 minutes. (see note)
Remove almonds from oven and allow them to cool slightly.
Meanwhile, combine maple syrup and water and bring to a simmer in a medium fry pan.
Pour almonds into fry pan and stir until all liquid is absorbed (2-3 minutes).
Spread almonds back out on parchment to cool slightly.
In a small bowl, combine the sea salt, cayenne, cinnamon, and sugar. Add almonds and toss until well coated.
Store in an air-tight container.
Notes
Once the almonds begin to smell "nutty," then they are likely done. At this point, bite into one to make sure it has the right crunch. If not, continue baking for another 1-2 minutes. This recipe can easily be doubled if you desire a larger batch. However, the cayenne should only be increased by 1-1.5x (unless you like really spicy food!).
