Ingredients
3poundsmedium red potatoescut into 1” pieces
¾poundasparagustrimmed and cut into 1” pieces
½cupplain Greek yogurt
½cupmayonnaise
2Tbspfresh parsleyminced
2Tbsplemon juice
1tspdried dill
1cuppeasfresh or frozen
1cup~2-3 ribs celery, diced
⅓cupred oniondiced
12oz.smoked salmonchopped
1tspblack pepper
¾tspsalt
{garnish} green onionschopped
Instructions
Place potatoes in a large steamer basket over boiling water; steam for 16-18 minutes, or until fork-tender.
Place asparagus in boiling water and cook for 4-6 minutes, or until crisp tender.
Transfer potatoes to a large bowl; let cool. Whisk together Greek yogurt, mayonnaise, parsley, lemon juice and dill until well combined. Pour over potatoes and gently toss to cover.
Add remaining ingredients (cooked asparagus, peas, celery, red onion, smoked salmon, pepper and salt); toss gently until well combined.
Chill for 2 hours or overnight.
{Optional} Garnish with green onions before serving.
