Ingredients
2seedless cucumbers
8oz.cream cheeseslightly softened
¼cupchopped chives
10oz.smoked salmonthinly sliced
Instructions
Mix the softened cream cheese and chives in a bowl until well combined. (The closer the cream cheese is to room temperature, the easier it will be to mix.)
Using a mandolin, carefully slice the cucumbers lengthwise into 1/4" thick strips.
Fold each cucumber strip in half lengthwise.
Top with small amount of cream cheese mixture.
Place small piece of smoked salmon on top.
Carefully roll up cucumber slice and secure with toothpick.
