16oz.lean ground beef
1medium yellow oniondiced
2tspminced garlic
128 oz. can diced tomatoes, drained
115 oz. can tomato sauce
215.5 oz. canspinto beans, drained and rinsed
2Tbspchili powder
1tspsalt
1tspground cumin
1tspsmoked paprika
{optional} ¼ tsp cayenne pepper
16oz.elbow macaroni
1cupgrated cheddar cheese
1cupgrated Monterey Jack cheese
{for topping} additional cheddar cheesesour cream, green onions
Instructions
Spray bottom and sides of a 6-quart slow cooker with cooking spray; set slow cooker aside.
Using a large skillet, add ground beef and onions. Cook over medium-high heat, stirring occasionally, until beef has browned. Drain any grease and transfer mixture into slow cooker.
Add all remaining ingredients except pasta (garlic, diced tomatoes, tomato sauce, beans, chili powder, salt, cumin, smoked paprika and cayenne); stir until well combined. Cover and cook on low for 5-6 hours.
Cook pasta according to package directions. Drain pasta and add to slow cooker along with grated cheeses. Stir and continue cooking for 5 more minutes, or until cheese has completely melted.
Before serving, top with additional cheddar cheese, sour cream and sliced green onions.
