Ingredients
2cupscake flour
1¼cupsgranulated sugar
2tspbaking powder
¼tspsalt
2large eggs
½cupbuttermilk
2tspvanilla extract
¼cupunsalted butter, melted
¼cupheavy cream
½cuppowdered sugarfor dusting cake after baking
Instructions
Preheat oven to 375°F. Lightly grease 9” ring mold pan; set aside.
In a medium bowl, add all of the dry ingredients (cake flour, granulated sugar, baking powder and salt). Stir until well mixed.
In a separate bowl, whisk together the eggs, buttermilk, vanilla extract, melted butter and heavy cream.
Add the liquid ingredients to the dry ingredients; stir until just mixed.
Transfer batter into the greased ring mold pan.
Bake at 375°F for 28-30 minutes, or until cake is light golden brown on top.
Let cake cool in the pan for 15 minutes. Remove cake from pan and place on cooling rack until completely cool.
Using a fine-mesh sifter, sift powdered sugar evenly over the top and sides of cake. Serve within a few hours. (Note: If you plan on serving this cake later, just store it uncoated in an air-tight container. Dust with powdered sugar just before serving.)
