Ingredients
1½cupsall-purpose flour
1cupold fashioned oatsplus more for topping
⅔cupgranulated sugar
2tspbaking powder
½tspbaking soda
¼tspsalt
1Tbsporange zest
¾cupchopped walnutsdivided
⅔cupfresh orange juice
½cupmilk
1large egg
¼cupbuttermelted
2Tbspcoarse sugarsuch as sanding sugar or turbinado sugar
Instructions
Preheat oven to 375°F.
Line a 12-cup muffin pan with paper liners or spray with nonstick cooking spray; set pan aside.
Using a large bowl, add flour, oats, sugar, baking powder, baking soda, salt, orange zest and ½ cup of chopped walnuts; stir until well combined. Set flour mixture aside.
Using a separate medium bowl, whisk together orange juice, milk, egg and melted butter. Pour liquid ingredients into bowl with dry ingredients; stir until just barely combined.
Divide batter into prepared muffin tin. (Note: You can fill the muffin cups very close to top as these muffins won’t rise too much.)
Sprinkle additional oats, coarse sugar and remaining ¼ cup of chopped walnuts on top of muffins.
Bake for 15-20 minutes, or until a toothpick inserted into center of a muffin comes out mostly clean.
Let stand for 5 minutes before removing muffins from pan. Transfer muffins to a wire cooling rack until ready to serve.
