Instructions
Using a handheld mixer, beat the cream cheese on medium speed until smooth.
Add the sugar and vanilla extract; beat on medium speed until fully incorporated.
In a separate bowl, whip the heavy cream until medium peaks form. Fold the whipped cream into the cream cheese mixture.
Using a piping bag fitted with a medium-sized star tip, pipe the cream cheese filling into the mini filo shells.
Cover lightly with plastic wrap and refrigerate 2-3 hours, or until filling is set.
Garnish with fresh blueberries before serving.
