Ingredients
1crusty baguette
110-oz. container Sabra hummus (see note)
1Tbspolive oil
3cupsroastedsalted peanuts
¾cupred oniondiced
1jalapenoseeds and ribs removed, diced
¼tspground cumin
1medium tomatodiced
¼cupshredded carrots
¼cupfresh cilantrominced
1tspchaat masalasee note
¼tspcayenne pepper
½tspsalt
2tsplime juice
Instructions
Slice bread on a diagonal into ¾”-1” thick slices. Place bread in a toaster oven or grill pan; cook over medium-high heat until lightly toasted.
Spread Sabra hummus generously on top of toast; set aside.
Using a large skillet, add olive oil, peanuts, onion, jalapeno and cumin; stir until well combined. Cook over medium-high heat for 3-4 minutes, stirring often, or until onion begins to soften. Remove from heat and stir in remaining ingredients (tomato, shredded carrots, cilantro, chaat masala, cayenne pepper, salt and lime juice).
Place spoonful of peanut mixture on top of each piece of hummus toast.
Notes
I used Sabra’s Classic Hummus flavor, but their Rosemary + Sea Salt or Jalapeno flavors would also work well in this recipe!Chaat masala is a spice blend that can be found in most Indian markets or in the Indian food section of large grocery stores.
