Ingredients
2Tbspolive oildivided
2Tbsplemon juice
1tspkosher salt
1tspdried oregano
1½poundsbaby~1”-1½” in diameter potatoes, halved
¾cupParmesan cheesegrated
¼cupfresh Italian parsleychopped
Instructions
Preheat oven to 400°F.
Using a large bowl, add 1 Tbsp of olive oil, lemon juice, salt, oregano and halved potatoes; toss until well coated.
Using a large baking dish, brush bottom of dish with the remaining 1 Tbsp of olive oil. Sprinkle Parmesan cheese evenly across bottom of dish. Place potatoes cut-side down into baking dish.
Roast for 38-40 minutes, or until potatoes are fork tender.
