Ingredients
½poundthick-cut bacondiced
16oz.cream cheesesoftened
1½cupsmild cheddar cheeseshredded
1cuppepper jack cheeseshredded
1tspgarlicdiced
½cupsour cream
½cupmilk
½tspcumin
4jalapeno peppersseeded and diced (see note)
⅓cupPanko-style bread crumbs
2Tbspunsalted butter
{For serving} tortilla chipscarrots, celery, sliced bell peppers, etc.
Instructions
Preheat oven to 350°F.
Place a medium cast iron skillet over medium-high heat. Once hot, add diced bacon and cook until crispy. Remove bacon with slotted spoon and pat dry with paper towels. Discard grease in pan.
In a large bowl, combine the softened cream cheese, cheddar cheese, pepper jack cheese, garlic, sour cream, milk, cumin diced jalapeno peppers and cooked bacon. Stir until well combined.
Transfer mixture back into cast iron skillet. Top with bread crumbs. Cut butter into ¼” pieces and sprinkle over top of bread crumbs.
Bake at 350°F for 35 minutes, and then broil for 3-5 minutes or until bread crumbs are golden brown.
Serve hot.
Notes
Instead of dicing fresh jalapenos, feel free to substitute 1 (4 oz.) can of diced jalapenos.
