Ingredients
2cupsshredded chickensee note
¾cuphummusI used plain, but other flavors could work here, too.
½cupfinely diced celery~2 stalks
½cupfinely diced red onion
¼cupfinely diced red bell pepper
1TbspDijon mustard
½Tbspdried parsley
1tspminced garlic
1tspkosher salt
¾tspblack pepper
lettucefor sandwiches
grain bread or croissantsfor sandwiches
Instructions
Using a large bowl, add all ingredients (shredded chicken, hummus, celery, red onion, bell pepper, mustard, parsley, garlic, salt and pepper); stir until well combined.
Refrigerate until cold.
Notes
I used rotisserie chicken to make this Hummus Chicken Salad. However, you could cook 3-4 boneless, skinless chicken breasts and dice or shred them instead. Grilling the chicken breasts would add an extra layer of flavor!
