Ingredients
For the Steak
2sirloin steaks6-8 oz. each
½Tbspvegetable oil
2tspkosher salt
½tspblack pepper
½tsponion powder
½tspgarlic powder
¼tsppaprika
For the Balsamic Vinaigrette
½cupolive oil
¼cupbalsamic vinegar
1TbspDijon mustard
1Tbsphoney
½tspsalt
½tspblack pepper
For the Salad
8cupsspring mix
1½cupssliced strawberries
1cupcornfresh or canned
1cupchopped walnutslightly toasted
1¼cupsblue cheesecrumbled
Instructions
For the Steak
Rub both sides of steaks with vegetable oil. Using a small bowl, combine kosher salt, black pepper, onion powder, garlic powder and paprika. Sprinkle mixture evenly onto both sides of steaks.
Preheat grill to medium-high heat (~400°F).
Grill steaks for 3-4 minutes per side, or until they reach desired doneness.
Let steaks rest for at least 10 minutes before slicing. Slice steaks against the grain into thin strips.
For the Balsamic Vinaigrette
Using a small bowl or jar, add all of the vinaigrette ingredients (olive oil, balsamic, Dijon mustard, honey, salt and pepper); stir or shake until well combined.
For the Salad
Divide spring mix evenly into 4 bowls. Top with sliced strawberries, corn, toasted walnuts, blue cheese and steak.
