16-oz. bag mini peppers
cooked rice

Instructions
Soak skewers in water for at least 30 minutes before using.
Using a small bowl, whisk all ingredients except for shrimp and peppers together until well combined.
Place shrimp and peppers in a large bowl. Add marinade and toss until well coated; set aside to marinate for 15-20 minutes.
Preheat grill to medium-high heat.
Thread shrimp and peppers onto separate skewers. Place skewers with peppers on grill and cook for 4-5 minutes.
Rotate pepper skewers and add shrimp skewers to grill. Let shrimp grill 2-3 minutes per side, or until pink in color and fully cooked.
Remove shrimp and peppers from the grill and serve over rice.
