2Tbspcanola oil or vegetable oil
3Tbspminced lemongrass
2Tbspsoy sauce
1Tbsplemon juice
2tspbrown sugar
2tspminced garlic
2tspgrated fresh ginger
1tspfish sauce
1½-2lbs.bonelessskinless chicken thighs
sliced green onionsfor serving
Instructions
Using a medium bowl, add canola oil, lemongrass, soy sauce, lemon juice, brown sugar, garlic, ginger and fish sauce; whisk until well combined.
Add chicken, turning several times until well coated.
Cover and refrigerate for 1-2 hours.
Preheat grill to medium heat (350°-375°F).
Grill chicken 3-5 minutes per side, or until fully cooked. (Note: Chicken is fully cooked when an instant read thermometer inserted into the thickest part of the chicken reads 165°F.)
