Ingredients
4ripe avocadoshalved, pitted and peeled
1medium red onionhalved
1½Tbspcanola or vegetable oil
1jalapenoseeds and ribs removed, diced
Juice of 2 limes~3-4 Tbsp
½tspgarlicminced
½tspsalt
½tspchipotle powder
{optional} 1 medium Roma tomatodiced
{optional} ¼ cup fresh cilantrominced

Instructions
Preheat grill to medium-high.
Brush both tops and bottoms of halved avocados as well as halved onion with canola oil.
Once grill grates are hot, reduce temperature to medium. Place the avocados and onion cut-side down on grill. Grill for 4-5 minutes. Flip and grill for 4-5 more minutes, or until both have grill marks.
Remove avocados and onion from grill and let cool slightly. Once cool, dice onion.
In a large bowl, roughly smash avocados and add all remaining ingredients (diced onion, jalapeno, lime juice, garlic, salt, chipotle powder, tomatoes and cilantro); stir until well combined.
