Ingredients
1pintcherry tomatoesquartered
¼cupfresh basilcut in chiffonade style
1crusty baguette
3Tbspolive oil
2Tbspbalsamic glazesee note
1½tspkosher saltplus more for finishing
½tspblack pepperplus more for finishing
8oz.fresh mozzarellacut into thin slices
Instructions
Using a medium mixing bowl, add tomatoes and basil; toss until well combined. Set bowl aside.
Preheat grill to medium-high (~375°F) heat.
Slice baguette on the bias into 1” thick slices.
Brush tops and bottoms of slices with olive oil.
Brush tops of slices with balsamic glaze.
Sprinkle salt and pepper evenly on top of slices.
Top each baguette slice with piece of mozzarella.
Grill slices for 3-4 minutes, or until mozzarella has mostly melted.
Remove slices from grill and top with tomato-basil mixture.
Serve warm or at room temperature.
Notes
Balsamic glaze is available in most grocery stores. However, you can make your own by simmering balsamic vinegar on stovetop until ~⅓ of the original volume.
