Ingredients
For the Chicken
½red oniongrated
¼cuplemon juice
2Tbspolive oil
2Tbspgaram masala
½tspcumin
4bonelessskinless chicken breasts
For the Raita
1/2cupplain Greek yogurti.e. one 5.3 ounce container
2Tbspred oniondiced
1-2tspjalapenodiced and seeds removed
1tspfresh cilantro leavesfinely chopped
1Tbspcucumberdiced
pinchblack pepper
pinchground cumin
For the Wraps
4Flatout Harvest Wheat wraps
½head Romaine lettucechopped
1red bell pepperthinly sliced
Instructions
For the Chicken
In a small bowl, whisk together grated red onion, lemon juice, olive oil, garam masala and cumin.
Place chicken in a shallow glass baking dish. Rub both sides of chicken with the onion mixture. Cover and refrigerate for 4-6 hours. (Note: Chicken can be refrigerated overnight if desired.)
Preheat grill (outdoors) or grill pan (indoors) over medium heat. Grill chicken 4-6 minutes per side, turning once, or until fully cooked.
For the Raita
In a small bowl, combine all ingredients together; stir well. (Note: Raita can be made ahead and stored in refrigerator overnight if desired.)
To Assemble Wraps
Slice the chicken breasts into thin strips; set aside.
Spread 3-4 Tbsp of Raita over half of each flatbread. Divide lettuce mixture evenly between flatbreads. Top each flatbread with chicken strips and sliced red bell peppers.
