Ingredients
1English cucumber
1½cupsplain Greek yogurt
½cupsour cream
¾cupfeta cheesefinely crumbled
1clovegarlicminced
1½Tbsplemon juice~½ medium lemon
1Tbspwhite wine vinegar
1Tbspfresh dillminced
1tspkosher salt
½black pepper
Instructions
Slice the cucumber lengthwise and use a spoon to scrape out the seeds. Using a box grater, grate the cucumber into a medium bowl. Using several paper towels, press the grated cucumber firmly to remove as much liquid as possible.
Add all of the ingredients (yogurt, sour cream, feta, garlic, lemon juice, vinegar, dill, salt and pepper) and mix until well blended. (See note.)
Cover and refrigerate for several hours. (Tip: This dip will taste much better if you refrigerate it overnight!)
Notes
I recommend using a high quality Greek yogurt here. You're looking for a thick yogurt since it's being used in a dip, and it's definitely worth spending a bit more for a high quality yogurt!
