This Easy Black Bean Salad is a summer staple in our house. It’s delicious as either a side dish with grilled food or as a dip with tortilla chips!

Ingredients
⅓cupred wine vinegar
⅓cupolive oil
1tspsalt
½tsppepper
1½tspgarlicminced
314.5-oz. cans black beans, drained and rinsed
114-oz. can yellow corn, drained (see note)
1red bell pepperdiced
1green bell pepperdiced
1medium red oniondiced
juice of 1 lime
{optional} fresh cilantrochopped
Instructions
Using a small mixing bowl whisk together vinegar, oil, salt, pepper and garlic; set aside.
Using a large mixing bowl, add black beans, corn, bell peppers and onion. Add olive oil mixture and toss until well combined. Cover and refrigerate overnight.
Prior to serving, squeeze a fresh lime on top of salad and {optional} garnish with freshly chopped cilantro.
Notes
If fresh corn is available, I slice 3 ears of raw corn instead.
