Ingredients
For the Pie
1 9” pie shellhomemade or store-bought
½cupsugar
¼cupbrown sugar
3Tbspall-purpose flour
1Tbsplemon juice
½Tbspvanilla extract
¾tspcinnamon
1/8tspnutmeg
4medium applespeeled, cored and sliced ~1/4” thick
For the Topping
½cupall-purpose flour
½cuprolled oats
¼cupsugar
¼cupbrown sugar
¼cuppecansfinely chopped
½tspcinnamon
4Tbspunsalted buttercold
Instructions
For the Topping
In a medium bowl, combine the flour, oats, sugar, brown sugar, pecans and cinnamon. Stir until well combined. Cut the butter into this mixture until butter is size of small peas. Place mixture in the refrigerator until needed.
For the Pie
Preheat oven to 425°F.
Fit pie shell into pie dish; set aside.
In a large bowl, add the sugar, brown sugar, flour, lemon juice, vanilla, cinnamon and nutmeg; stir until well-combined. Add the apples and toss until well-coated.
Pour apple mixture into prepared pie dish. Bake at 425°F for 15 minutes.
Remove pie from oven and reduce oven temperature to 375°F.
Sprinkle Topping evenly over the top of the pie. Cover dish lightly with aluminum foil and place in oven. Bake at 375°F for 35-38 more minutes, or until Topping is light golden brown. (Note: If needed, remove the foil and continue baking for another 5-7 minutes to allow the Topping to turn golden brown.)
