Ingredients
For the Salad
8oz.fusilli pasta
1pintcherry tomatoeshalved
2bell peppersdiced (I used 1 yellow and 1 orange)
⅓cupred oniondiced
2cupsbaby spinachchopped
3celery stalksdiced
3Tbspfresh dillminced
¾tspsalt
½tspblack pepper
1cupfeta cheesecrumbled
For the Lemon Dijon Dressing
⅓cupolive oil
¼cuplemon juice
3TbspDijon mustard
1tspgarlicminced
½tspsalt
½tspblack pepper
Instructions
For the Salad
Cook pasta according to package instructions. Rinse and drain the pasta in cold water.
Transfer pasta into a large bowl and add all remaining salad ingredients except for feta cheese. Stir until well combined.
For the Lemon Dijon Dressing
Using a medium bowl, whisk all ingredients together. Pour dressing over salad and toss until salad is well coated. Keep salad refrigerated; serve cold.
Prior to serving, top salad with crumbled feta cheese.
