Ingredients
1cupunsalted butter, softened
1cupbrown sugar
2/3cupsugar
2cupsall-purpose flour
1tspcinnamon
1tspbaking soda
½tspbaking powder
½tspsalt
2large eggs
2tspvanilla
2cupsold fashioned oats
1½cupsraisins
1¼cupscinnamon baking chips
Instructions
Line 3 baking sheets with parchment paper; set aside.
Preheat oven to 350°F.
Using a countertop mixer, cream together the butter and sugars until light and fluffy (~3-4 minutes on medium speed).
Meanwhile, in a separate bowl, whisk together the flour, cinnamon, baking soda, baking powder and salt until well blended.
Add the dry ingredients, eggs, vanilla, oats, raisins and cinnamon chips to the mixer bowl; stir together on low speed until just combined.
Roll 2 Tbsp of dough into a ball and place on baking sheet. Repeat with remaining dough, spacing cookies about 2” apart. Flatten each dough ball slightly with palm of your hand.
Bake at 350°F for 15-17 minutes, or until slightly golden in color.
Let cool on pan for several minutes and then transfer to wire rack until completely cool.
