Ingredients
¾cupunsalted buttersoftened
¾cupbrown sugar
¾cupgranulated sugar
¾cuppeanut butter
2large eggs
2tspvanilla extract
2cupsall-purpose flour
¼tspsalt
1¼tspbaking soda
¼cupgranulated sugarfor rolling cookies
2cupspeanut butter cupsany size, coarsely chopped
Instructions
Preheat oven to 350°F.
Using a countertop mixer, cream together butter, brown sugar and granulated sugar until light and fluffy (~3-4 minutes on medium speed).
Add peanut butter; mix until well combined.
Add eggs and vanilla extract; mix until well combined.
Using a small bowl, whisk together the flour, salt and baking soda. Add dry ingredients to mixer bowl; mix dough just comes together (~1-2 minutes).
Divide dough into balls ~2 Tbsp in size.
Roll dough balls in sugar and place on a parchment-lined sheet pan. Flatten each cookie slightly with the palm of your hand. Gently push chopped peanut butter cups into cookies.
Bake at 350°F for 12-14 minutes, or until edges of cookies just begin to turn brown.
Remove from oven. Let cookies cool slightly before transferring to a cooling rack.
