Ingredients
For the Chicken Souvlaki Skewers
1poundbonelessskinless chicken breasts or tenders
3Tbsplemon juice
3Tbspolive oil
2tspgarlicminced
1tspdried oregano
½tspsalt
¼tsppepper
1medium zucchiniquartered lengthwise and sliced into ¾” pieces
For the Tzatziki Sauce
1English cucumber
1½cupsplain Greek yogurtsee note
½cupsour cream
½tspgarlicminced
1½Tbsplemon juice~½ medium lemon
1Tbspwhite wine vinegar
1Tbspfresh dillminced
1tspsalt
½tsppepper
Instructions
For the Chicken Souvlaki Skewers
Slice the chicken breasts or tenders into 1” cubes; set aside.
In a small glass baking dish, whisk together the lemon juice, olive oil, garlic, oregano, salt and pepper. Place chicken in dish and toss lightly until well coated.
Cover dish and place in the refrigerator to marinate for 1 hour.
Meanwhile, soak 6 8”wooden skewers in water. (Note: If you didn’t make the Tzatziki Sauce earlier, then this is a great time to whisk it together.)
Preheat grill to medium-high heat.
Thread chicken and zucchini onto the skewers.
Place skewers on grill and cook for 9-10 minutes, flipping once, or until chicken is completely cooked.
Serve with Tzatziki Sauce.
For the Tzatziki Sauce
Slice the cucumber lengthwise and use a spoon to scrape out any seeds. Using a medium grater, grate the cucumber into a bowl. Using several paper towels, press the grated cucumber firmly to remove as much liquid as possible.
Add all of the ingredients (yogurt, sour cream, garlic, lemon juice, vinegar, dill, salt and pepper) and mix until well blended.
Notes
As the Greek yogurt is a key ingredient in tzatziki sauce, splurge and buy a small container of premium Greek yogurt. We've tried the store brand before, and it just doesn't taste the same.
