Ingredients
½cupunsalted buttersoftened
2Tbspolive oil
2tspminced garlic
¼cuppickled jalapenoschopped and drained (plus more for garnish)
14-oz. can diced green chilies, drained
½tspkosher salt
8oz.Cabot Pepper Jack cheesegrated
4oz.Cabot Seriously Sharp cheddar cheesegrated
1loaf French breadsliced horizontally
green onionschopped
Instructions
Preheat oven to 350°F.
Using a small bowl, add butter, olive oil, garlic, jalapenos, chilies, salt, Pepper Jack and cheddar; stir until well combined.
Spread cheese mixture onto both halves of the French bread and lay bread on parchment-lined baking sheet.
Lay several whole pickled jalapenos on top of the bread.
Bake for 8-12 minutes, or until cheese has fully melted.
{Optional} Broil on high heat for 2-3 minutes, or until edges of bread turn golden brown and crispy. (Note: Watch this stage very carefully to prevent bread from burning!)
Sprinkle top with green onions and slice into 1” pieces for serving.
