For the Cupcakes
1½cupsall-purpose flour
2Tbspcornstarch
1cupgranulated sugar
1½tspbaking powder
¼tspsalt
6Tbspunsalted butterroom temperature
2large eggsroom temperature
½cupmilkroom temperature
2tspvanilla extract
For the Champagne Frosting
¾cupchampagne
1cupunsalted butterroom temperature
4½cupsconfectioners’ sugar
1½tspvanilla extract
{for garnish} white chocolate chipscurls and/or silver jimmies
Instructions
For the Cupcakes
Preheat oven to 375°F.
Line a muffin tin with cupcake liners. (Tip: Spray inside of each wrapper with nonstick cooking spray.)
Using a large bowl, add flour, cornstarch, sugar, baking powder and salt; stir until well combined.
Add butter; stir until mixture appears crumbly.
Using a separate bowl, whisk together eggs, milk and vanilla extract. Add liquid ingredients to the bowl with the dry ingredients. Stir until just combined.
Fill each muffin cup with ~¼ cup of batter.
Bake for 18-20 minutes, or until a toothpick inserted into center of a cupcake comes out mostly clean.
Remove cupcakes from oven and let cool in pan for 5 minutes then transfer them to a wire rack until completely cool.
For the Champagne Frosting
Using a small saucepan, add the champagne and place over medium-high heat. Once boiling, reduce to medium heat and let simmer until mixture reduces to ¼ cup (~8-10 minutes).
Remove saucepan from heat and let reduced champagne cool completely to room temperature.
Using an electric mixer, cream together the butter and powdered sugar on medium speed until light and fluffy.
Add the champagne reduction and vanilla extract; mix until well combined.
Transfer frosting into a piping bag fitted with a large star tip. Frost tops of cooled cupcakes.
{Optional} Garnish top of cake with white chocolate chips, curls and/or silver jimmies.
