Ingredients
For the Chicken

skinless chicken breasts

olive oil

For the Nachos

15-oz. bag tortilla chips
1½
cups
cheddar cheese
shredded
1
cup
pepperjack cheese
shredded
2
medium tomatoes
diced
⅓
cup
sliced
tamed jalapenos

cup
white onion
diced
¼
cup
cilantro
chopped (alternate idea: diced green onions)
{optional toppings} sour cream
limes, diced avocado
Instructions
For the Chicken
Drizzle olive oil over both sides of chicken breasts and then sprinkle evenly with Italian seasonings, salt and black pepper.
Using a large skillet, cook chicken over medium-high heat until fully cooked; let cool before dicing.
For the Nachos
Preheat oven to 350°F.
Layer tortilla chips in cast iron skillet or on sheet pan. Sprinkle diced chicken evenly across chips.
Using a small bowl, combine the cheddar and pepperjack cheeses until well combined. Sprinkle cheese evenly on top of chips and chicken.
Bake for 15-20 minutes, or until cheese has fully melted.
Sprinkle tomatoes, jalapenos, onion and cilantro evenly on top of chips.
{Optional} Before serving, top with sour cream, a squeeze of lime and/or diced avocados.
