Ingredients
For the Pasta Salad
16oz.orecchiette or bow-tie pasta
16oz.perlineor small mozzarella balls
4cupscherry tomatoeshalved (i.e. 2 pints)
½green bell pepperdiced
1celery stalkdiced
½cupdiced yellow onions
½cupfresh basilchopped
¼cupchiveschopped
¼cupItalian parsleychopped
For the Dressing
½cupextra-virgin olive oil
⅓cupred wine vinegar
2Tbspcapersdrained
½Tbspdried Italian seasonings
1tspminced garlic
1tspkosher salt
½tspblack pepper
Instructions
For the Pasta Salad
Cook pasta according to package instructions. Rinse and drain pasta in cold water.
Transfer cooked pasta into a large bowl and add remaining Pasta Salad ingredients (mozzarella, tomatoes, bell pepper, celery, onions, basil, chives and Italian parsley); stir until well combined.
For the Dressing
Using a medium bowl, whisk together olive oil, vinegar, capers, garlic and black pepper.
Pour dressing over salad and toss until well coated.
Refrigerate until cold; serve cold.
Notes
For a fun twist, you could drizzle balsamic glaze on top of this pasta salad before serving.
