Ingredients
1/3cupBlue Diamond Lightly Salted almonds
½Tbspchopped fresh Italian parsley
1tspchopped fresh thyme
1tspchopped fresh rosemary
1tsplemon zest
¼tspground black pepper
18-oz log of soft goat cheese
Instructions
Using a food processor or mini-chopper, pulse almonds until finely ground. In a small bowl, combine the almonds with the parsley, thyme, rosemary, lemon zest and black pepper.
Spread almond-herb mixture on a piece of wax paper or plastic wrap. Roll goat cheese log in mixture until well coated.
Serve with crackers or slices of toasted baguette.
