My wife and I love to entertain. Neighbors, coworkers, friends, friends of friends…heck, even the dogs. There is just something about inviting people over for good conversation and good times! But have you ever noticed that guests will always (and I mean always) gather in your kitchen? You can have a beautiful table laid out with all sorts of appetizers, and people will still end up in the kitchen! That’s fine as long as you don’t have any cooking or preparing to do during the party. Today’s post is an excellent party recipe because it is both simple and it can be made entirely in advance. That’s right…you can actually enjoy your own party!
Traditional canapés are finger foods on small crackers or pieces of bread. These Smoked Salmon and Chive Canapés are a twist on the traditional as the cucumber serves as the base instead of bread. The chive and cream cheese mixture is simple to make and adds an incredible layer of flavor to this recipe.
Tip: I used a mandolin to create the super thin strips of cucumber. Also, seedless cucumbers are a better than regular cucumbers for this recipe.
Note: If possible, use smoked wild salmon. It might be a bit more expensive than the farm-raised version, but the extra flavor is well worth the difference in price!
