This Scallops and Roasted Veggies Quinoa Bowl is packed with flavor…and it can be made on a weeknight!
My very first job in high school was working in the meat and seafood department at a specialty grocery store around the corner from my house. The job wasn’t bad at all, and in fact one of my best friends got a job working there, too. Our main role was to keep the products stocked and help customers.
Over that summer, I really got to know some of the regular customers. There was one gentleman who always came in for steaks on Thursday afternoon. You could set your watch to it. Another lady would come in every Monday for scallops. Monday morning would arrive, and she’d be there picking up scallops for the week. Isn’t it a bit odd that I still remember these things 20 years later? (On a side note, the scallops lady thought I looked like a dead-ringer for a famous golfer. And to this day, whenever I see that golfer on tv, I always stop and look.)
Whenever Laura and I go out to eat, the first thing she looks for on the menu is scallops. I’m not kidding. Don’t get me wrong. I enjoy scallops, but Laura loves ’em! Laura’s parents were in town recently, and I wanted to make something fun for dinner for all of us.
