Mix up a summer classic with this tasty Smoked Salmon Potato Salad!
It’s funny how parents can understand their own child’s baby talk. To anyone else, Robbie’s babbling would be just that…baby babbling. But to us, we totally know what he’s talking about. There are some relatively obvious words like “gog” when he refers to one of the dogs. Or “nana” when he wants a banana. And there are some very clear words like mama and dada. But then there are the less obvious words. For example, we’ve figured out that a very soft “puff” refers to a dog barking. (It’s because we tell him that dogs say “woof woof.”) And “bubba” refers to his pacifier, aka WubbaNub. But one of our favorites is “blub blub.”
I was walking Robbie down the hall at daycare the other day, and he randomly just started shouting “blub blub!” “blub blub!” Anyone else would probably assume that it’s just random babble. But not the parents. We know that “blub blub” means fish, and sure enough there was a painting on the wall with a huge fish. I’d never actually noticed this painting…but Robbie sure saw it!
Back in the winter, we had an aquarium open up here in our area. Now if you’re familiar with the Albany, NY area, then you probably had the same reaction as us: ‘Huh? An aquarium? We aren’t a big enough city for an aquarium.’ (Laura and I moved from Atlanta, where the Georgia Aquarium is world-famous!) But, sure enough, we now have an aquarium. It’s not very large, and it’s primarily geared for kids…but it’s great for Robbie. You should see the look on his face when we go there! (Not to mention the constant stream of “blub blub” the whole time.)
In somewhat related news, Laura was traveling for work recently and picked him up some play pots and pans with stuffed food. There’s farfalle pasta, sausage links, a wedge of cheese, an eggplant…and a salmon. How exactly are we supposed to tell him to cook the “blub blub”? I think that discussion will get saved for another day when he’s much older…
And that roundabout story of Robbie’s babbling brings us to this Smoked Salmon Potato Salad. Or maybe I should’ve called it Blub Blub Potato Salad. Either way, this one is super fun! I love a good classic potato salad, but I also like toying with classic recipes. And that’s how this Smoked Salmon Potato Salad came about.
This recipe includes the classic potato salad ingredients like onions, mayo and celery…but then I added in some asparagus, peas and of course smoked salmon. (You may remember this Pesto Potato Salad from last month where I included fresh green beans and peas.) And then I used a bit of dill to bring all of the flavors together. This potato salad is delicious…trust me!
So if you’re looking for a twist on a classic summer picnic food, give this Smoked Salmon Potato Salad a shot! (And if at all possible, try to find wild salmon…it’s worth the extra cost.) Enjoy this summer weather, my friends!
