Try these Black Bean Sliders with Mango Jalapeno Salsa!
Last week, I met my wife after work at our local warehouse club. We’d decided to have an impromptu grilling party the next night with our friends, so we had some grocery shopping to do. (I recognize that’s it’s strange for a family of two to shop at warehouse clubs…but you know what? They’re convenient for some things!)
After we loaded our cart with chips, canned tomatoes (for a massive batch of restaurant-style salsa), and a decorative hibiscus tree, we decided to swing through the produce section to grab some fresh fruit. My wife had been craving Thai sweet sticky rice, so she wanted to get a mango. But we did more than just get a mango. We got 7 pounds of mangoes. Did I mention there are only 2 of us in the house?
Needless to say, we’ve been searching for fun ways to use mangoes lately. We made a big summer fruit salad. We made side salads with fresh greens, blackberries, mangoes and feta cheese. But we still had mangoes left. 7 pounds of mangoes is a lot! So I decided to whip up a quick and tasty Mango Jalapeno Salsa. This salsa was incredible just by itself on chips, but I saved some for these Black Bean Sliders that we grilled up for dinner.
I have a confession. I didn’t grow up eating beans. Well, check that, we did have green beans quite often, but other beans just didn’t show up that much. In fact, until high school, my favorite bean was the jelly bean. (Hah…I kid!) Seriously, though, when I was finally exposed to black beans years later, I was hooked from the start. I love adding them to burritos and quesadillas…and black bean burgers are always a fun way to mix up dinner on the grill.
We’ve had our fair share of desserts hanging out in the kitchen lately, so I wanted to grill up something light and healthy. I pulled out my black bean burger recipe, and shaped them into little sliders instead. I topped each slider with a spoonful of that Mango Jalapeno Salsa and a bit of queso fresco cheese. I wrapped each of these bad boys up in a Flatout Foldit Slider. Inspired by Healthy Girl, these little flatbread sliders come in at just 47 calories each. We all know that bite-sized versions of anything are better, right? Just kidding!
